Mayonnaise: Use your favorite store-bought vegan mayonnaise, my favorite brand to use is Hellman’s.
Chipotle in Adobo: These smoked jalapeños bring the heat and signature smoky flavor. Plus they give the delicious vegan chipotle mayo it’s orange-red color.
Fresh Lime Juice: It brightens everything up and gives it that tangy kick.
Garlic Powder: Because garlic makes everything better.
Onion Powder: Adds a little extra flavor.
Salt: Enhances all flavors in everything so it’s a must.

Ingredient Alternatives
If you don’t have or can’t get cans of chipotle chile in adobo sauce then look in the spice isle for either chipotle pepper powder or chipotle powder.
If you’d like to use fresh garlic and onion you can but the flavors will be more pungent and will require more blending.
If you don’t have limes you can use freshly squeezed lemon juice instead.

How to Make Vegan Chipotle Mayo
You’ll need a large measuring cup or tall cup with a stick blender (also called immersion blender) or your regular blender will also do.
Step 1: Blend it up
Add the measured out mayonnaise to the blender cup, then add the smoky chipotle peppers, spices, and squeeze of fresh lime juice. The blitz until the chipotles are completely broken down and you have a creamy consistency.

Step 2: Taste & Adjust
Once creamy taste and adjust the ingredients to get your perfect spice level. You can add one or more whole chipotle pepper or just some of the adobo sauce for extra kick. For a milder flavor add less chipotle and to still get the red color you can add a Tablespoon of tomato paste or paprika powder and blend with the rest of the ingredients.
Need more tangy flavor? Then squeeze in more fresh lime juice.
Step 3: Refrigerate
