Don’t we all love a quick and easy meal that’s also nutricious?

Many months back my husband and I were eating out a a restaurant that focusus on healthy food when he discovered a black bean, spinach and goat cheese burrito. He fell in love with the simplicity of the ingreidents and how they came together in such a delicous combination of flavours. He urged that we return soon so that I too could try the burrito. We’ve been back many times and I’ve everytime we’ve eaten that burrito we are always satisfied.

The restaurant is so popular that when we order take-out it takes around an hour for delivery. So yesterday when the craving for the burrito struck me, and I was too hungry to wait an hour, I rummuged through the fridge and was thrilled that I had all of the ingredients needed. Since I had a few extra ingredients I added them to my burrito, you’ll see those listed as optional on the recipe.

This isn’t much of a recipe, rather more like a shopping list for you.

The original burrito only used flour tortillas, black beans, spinach leaves and goat cheese. Below is the list of ingredients that I used, and do feel free to adjust to your taste.

Ingredients:
flour tortillas, any size you’d like
boiled/cooked black beans or any beans of your choice (pictured are ayocote beans which are very large)
baby spinach leaves
goat cheese, either plain or herbed flavour (alternatively you can also use queso fresco)
slices of avocado
shreeded purple cabbage

Slightly warm up the flour tortillas to make them bendable, then layer any or all of the ingredients listed above. Fold the edges, roll up and enjoy!

You can serve with seasonal fruit if desired — we already have watermelon in season here, and it goes great with these light burritos. Enjoy!
