Vegan birria tacos are made with a robust tasting birria broth that a tortilla is dipped into. Then it's filled with vegan cheese and vegan birria.
Boil the dried chilies with the onion, garlic, and tomatoes, Then blend until completely smooth.
Strain sauce into a pot then add the remaining herbs and spices and the vegetable broth. Simmer.
Sauté the onion until soft then add the shredded mushrooms and seasoning. Cook until tender and crispy.
Add cooked mushroom mixture to the birria broth and simmer until ready to serve.
Heat the tortilla then add shredded vegan cheese and vegan birria meat. Cook until cheese melts, adding some of the birria broth over each taco. Serve with some broth and enjoy!
