This green pesto sauce is made with cilantro, cotija cheese, and jalapeno to create a Mexican-style pesto sauce. Goes great on pasta, as a dip, a dressing or to marinate any protein.
First process the almonds until broken down completely. Add the cotija and process until broken down. Next the garlic, salt and chile and process until smooth.
Add the lime juice if using, then turn processor to low and slowly drizzle in the olive oil until you have a pesto to your desired creamy consistency.
Pour into an airtight container to use later or use immediately in any of your desired recipes. It goes amazing on pasta.
