Mole Ranchero is the easiest mole sauce you can make. This authentic mole recipe is vegan and so delicious over veggies or your favorite vegan protein.
Wipe clean the dried chiles, remove stem and seeds. Reserve some seeds then lightly toast the chiles in a little oil.
Dry roast the spices and chile seeds in a nonstick pan for 1 to 2 minutes. Set aside.
Fry or sauté the tomato, onion and garlic until softened and browned.
Add the toasted chilies, all the spices and some vegetable broth to the pot with the veggies and simmer until everything is completely softened.
Blend the softened ingredients until smooth.
Strain mole sauce into the pot, season and add remaining broth. Simmer for 15 minutes.
Add diluted masa to help thicken the mole ranchero sauce. Simmer another 10 minutes or until thickened and ready to serve.
