This easy to make verdolagas guisado is made with Mexican purslane, salsa verde, button mushrooms and potatoes. It's a delicious quick meal!
Boil the salsa verde ingredients until soft. Then blend until smooth and set aside.
Sauté the mushrooms until soft then add the verdolagas, seasonings and cook for a few minutes.
Add the cooked potatoes if using then pour in the salsa and cook for another few minute's.
