Mexican ejotes con huevo or green beans with egg come together in 30 minutes and are a delicious vegetarian dish perfect any night of the week!
Heat the oil in a large pan. Once hot add the onion and sauté the until soft and translucent.
Add the green beans, tomato, garlic and seasonings. Mix until well combined. Cook until the green beans are tender.
Pour in the lightly beaten egg and mix well into the cooked vegetables. If using vegan egg you can mix it in now too.
