Add the chopped guava, beet, lime juice, and 3 cups of water to a blender. Blend until completely smooth. If needed, add a little more water to help everything blend evenly.
Strain the mixture:
Place a colander or fine mesh strainer over a large bowl or pitcher. Pour the blended mixture through the strainer. Use a spoon to stir and press the mixture to extract as much liquid as possible. Discard the seeds and pulp.
Add remaining water:
Pour in the remaining 3 cups of water and stir well to combine. Taste and adjust by adding more water for a lighter flavor if desired.
Serve:
Stir well before serving. Pour over ice and enjoy immediately for the best flavor.
