Vegan Tortilla Soup

A 30 minute recipe for making authentic Mexican tortilla soup.

Heat oil in a frying pan and once hot fry the tortilla strips and some dried chile strips.

Blend

Blend the tomatoes, onion, garlic, broth, seasonings, and chile, until smooth.

Simmer

Pour blended ingredients into a pot and simmer for 15 minutes. Taste and adjust salt if desired or needed.
