This recipe is how you make vegan masa for tamales rojos or to fill with any other vegan tamales fillings.
Make the red chile sauce for tamales according to the recipe on my blog. Then strain it through a fine sieve and set aside.
Whip the shortening until airy and creamy. I used a handheld mixer but you can also use a stand-mixer.
Add some masa harina, baking powder and salt and mix until well combined.
Pour in the red chile sauce and mix until well combined. Add some vegetable broth and a little more masa harina and mix.
Little by little add more masa harina and vegetable broth until it's all used up and you have a smooth and creamy tamale masa dough.
If you'd like you can do the masa float test by dropping a small dollop of the tamale masa into a glass of water. If it floats then it means it's nice and airy and ready to use. If it doesn't you can whip a little longer if desired.
