Mexican picadillo is ground beef cooked with potato and carrots in a tomato sauce, this is a delicious vegan picadillo recipe.
Sauté the garlic and onion until soft and translucent.
Add the hydrated TVP crumbles and spices and saute for a few minutes.
Add the potatoes and carrots and mix well then add the vegetable broth. Simmer until veggies are cooked through.
Next add the tomato sauce and simmer another 10 minutes. Taste before serving and adjust seasonings if desired.
