These incredibly simple bean and cheese tamales are a classic tamale that your whole family will love. You can make them with vegan cheese or regular cheese.
Sort through the corn husks to remove any damaged ones. Soak in warm water until ready to use.
Make the vegan masa for tamales from my recipe on the blog.
Drain the hydrated corn husks, then spread the masa in a thin layer.
Add a heaping tablespoon of the refried beans and a slice of cheese in the center of the spread masa.
Bring both edges of the corn husk towards the center to create a pocket. Fold up the bottom tip. Repeat until all the ingredients are used up.
Pour hot water into the steamer pot, place the steaming rack on it then arrange the tamales standing up. Cover and steam until ready.
