Homemade vegan chorizo with the same authentic flavor as the traditional Mexican chorizo. Full of spices, delicious flavor but without the meat!
Put the soy crumbles in a large microwave container and pour enough water to cover it. Microwave 2 minutes then set aside.
Cook the prepped chile pods, onion and garlic in a pot with plenty of water. Cook until soft.
Strain and squeeze out all the excess water from the rehydrated soy crumbles.
Blend the softened chiles, onion and garlic until smooth. Then add the spices and vinegar and blend until well combined.
Pour the chorizo salsa over the soy crumbles and mix until well combined. Cover and marinate for at least one hour or overnight is best.
Cook the soy chorizo as desired and use in all of your favorite Mexican dishes.
