Mexican sopa de conchas or shell soup is comfort food in a bowl. It's so easy to make and kid approved!
Blend the tomatoes, onion, garlic and a little water until smooth.
Heat a bit of oil in a large pot then add the pasta shells and cook until golden brown.
Carefully pour in the blended tomato salsa over the pasta shells. It may splash so be careful. Cook for a few minutes.
Pour in the vegetable broth then add the cilantro. Partly cover and simmer until the pasta is cooked through.
