Rajas con crema are a Mexican vegetarian dish made with roasted poblano pepper strips and cooked in cream sauce.
Fire roast or broil the poblanos. Sweat then peel skin off. Seed and slice into strips.
Sauté onion, garlic and corn kernels until onion is soft.
Mix in the roasted poblanos. Then add the crema and stir until well combined.
Simmer until crema dissolves and it's heated through.
Taste for seasoning and serve.
