This Mexican potatoes recipe is easy to make, budget friendly and can be used to make tacos or to fill burritos or gorditas.

Sauté the potatoes until soft then add onion, garlic and chile.

Add the tomato and cook until soft. Season with salt to taste.
Mix in chopped cilantro right before serving, if desired. Taste for salt.
Serve as a taco filling or to stuff burritos or gorditas. Or serve with refried beans & tortillas.
