This creamy Mexican chicken salad is perfect for days you don't want to cook. Delicious on tostadas or saltine crackers. This one is vegan!
Follow the instructions on my blog for rehydrating the TVP soy meat.
In a large bowl mix the dressing ingredients with the cooked vegetables and TVP.

Serve the chilled ensalada on crunchy tostada shells & top with hot sauce if desired.
If you'd like you can also server on saltine crackers instead of tostadas.
