Heat the oil in a cast iron skillet, once hot add the oil then the Shishito peppers in a single layer.
Roast on the skillet until they blister and turn a little golden. Then flip over and repeat on the other side.
The Shishito peppers are done when blistered on both sides and you can see their thin skin start to peel away.
While they're still hot, sprinkle with some salt. Making sure to evenly season all the peppers.
