Mexican pickled Carrots
Great on Tacos!
These can be served as a garnish or side with any Mexican meals. Or if you love them like me you will eat them straight out of the jar as a spicy snack, yum!
carrots, onion, jalapeno, garlic, herbs and spices water & vinegar
Sauté the vegetables, add the spices. Boil the water and vinegar. Combine the two in a large sanitized jar
Seal and allow to cool before storing in the refrigerator
Allow to sit overnight for great taste. Keeps in the refrigerator for a few weeks
