Quick and easy, no-cooking involved in this flavorful Mexican bean salad with avocado and corn.
In a large mixing bowl mix everything except the avocado, salt and lime juice.
Slowly mix in the avocado chunks then drizzle lime juice and sprinkle in the salt. Mix until well combined.
Pour blended ingredients into a pot and simmer for 15 minutes. Taste and adjust salt if desired or needed.
