Tofu scrambles are so easy to make and make a delicious high protein breakfast. This hearty breakfast of Mexican style tofu scramble or tofu a la Mexicana is a great way to start your days.
Heat the oil then sauté the onion until soft, then add the chile pepper and tomato and cook for another few minutes.
Crumble the tofu and add it to the pan, mix well then sprinkle in all of the seasoning and mix well.
Cook until the tomatoes have softened and to your desired tofu texture. Taste for salt and adjust if necessary.
Serve with refried beans, avocado slices, your favorite salsa and corn tortillas. Enjoy!
