Enmoladas or mole enmoladas are like enchiladas except they are covered in mole sauce instead of red salsa or salsa verde. These are made vegan and they are scrumptious!
Prepare the mole sauce according to package instructions, or make my mole ranchero recipe.
Heat the oil and sauté mushrooms until golden. Remove from the pan the cook the onion until soft before adding the vegetables to the pan.
Season with salt and black pepper then add the mushrooms back to the pan and cook for another few minutes.
Warm up the tortillas then fill with some of the vegetable mixture and fold into half moon shapes.
Drizzle the stuffed tortillas with mole sauce then sprinkle some sesame seeds over the enfrijoladas.
