Cook the sugar until melted into a caramel sauce. Quickly pour into ramekins.
Mix the remaining ingredients in a large bowl, until well combined. Rest for a at least 5 minutes.
Pour flan mixture into individual ramekins going 3/4 ways up.
Place in a roasting pan or deep casserole dish and pour in hot boiling water about halfway up. Bake until set.
Cool then cover and refrigerate overnight. Next day unmold and flip onto serving plate. Decorate with orange slice and mint leaves.
