The night before slice the bread rolls into even size cubes and set out to dry out on a baking try overnight.
Sauté the onion with the garlic until soft and translucent. Then add the celery and cook until soft.
Add the spices to the vegetables and cook for 2 minutes. Pour in some broth to deglaze pan.
Mix seasoned vegetables into the bread. Adding broth and mixing until well combined and hydrated.
Bake until firm and a little crispy on top. Allow to cool slightly before serving.
