The Best Mango Paletas Recipe (Mexican Popsicles Made Vegan)
Mexican ice pops or paletas are always made with fresh fruit and a great way to beat the heat. You're going to love this healthier vegan paletas recipe made with mango -- you'll need just 4 ingredients!

Instructions
Chop your mangos into small pieces. You can use my tips to do it quickly. Spread the mango pieces on a baking sheet and place in the freezer for about an hour. Or you could also just use frozen mango.
Place all of the ingredients in a blender and blend until smooth. If needed you can add a splash of coconut milk or water to help the blender move easier.
Pour your paleta mix into your ice pop molds. Place the cover that goes on top and insert popsicle sticks.
Place in freezer and freeze for at least 4 hours or until set. Make sure your popsicle molds are laying evenly to avoid any spilling or crocked paletas.

Please notice that the nutritional information will differ depending on the brand of coconut yogurt or vegan yogurt used.The mango you’ll need is fresh then you’ll need to freeze it to help the popsicles freeze quicker. As an alternative you can use frozen mango. Or don’t freeze the mango and you’ll just need to allow more time for the popsicle to fully set.An alternative version would be to replace the lime juice with orange juice.
