Easy Vegan Fajitas | For When You Don't Feel Like Cooking
A super quick, delicious and nutritious meal that can be ready in about 30 minutes! Fajitas are super easy to make, you probably have everything in your kitchen right now. In this super easy and quick recipe I use oyster mushrooms and fire roasted poblano peppers to give the dish a smoky awesomeness that poblanos have.
3medium poblano peppers roasted over an open flameor just cut into strips
half a small purple onionsliced into strips
3clovesof garlicroughly minced
1 to 2serrano peppersthinly sliced
vegetable seasoning
dried epazote leaf or omit if you don't have
low-sodium soy sauceto taste
olive oil
Instructions
Heat the oil and once hot add the onions, sauté until soft. Then add the minced garlic and serrano pepper, and cook for a minute or two. Then add the poblano pepper and sauté for a few minutes before adding the oyster mushrooms. Sprinkle the vegetable seasoning and epazote if using, over the ingredients. Lastly drizzle the soy sauce over the vegetables and cook just until the mushrooms are soft and tender. Serve with warm tortillas and your favourite salsa.
Notes
*If you are first fire-roasting the poblano peppers, the prep time will increase. But if you're just using fresh, raw peppers then it's much quicker.
